Summer time finally!!!

Madison loves to be outside so I am positive this year we will all be tan and tired! For Memorial Day I ran a 10k in Hendersonville so I was hoping for a relaxing rest of the day... well then I realized I have an almost two year old so no rest for anyone. 

Matt blew up the redneck inflatable in the backyard for her to splash around in but she ended up liking the hose more.

My recent run

As I have mentioned before I am training for a half marathon in October. I love to run in our neighborhood but sometimes I need the thrill of a race or event to get me going. This past Saturday I participated in the United We Run 5k in the rain. Ok, not al of it was in the rain but it was a very yucky and humid day. 

I had not ran in almost a week and was not very healthy through the week so I knew this was going to be a challenge 3 miles or not. I ended up around 34 minutes and 5th in my age division. Not too bad I guess. I have stepped it up again this week and I'm running much better and getting ready for my first 10k on Memorial Day.

Teacher Gifts

I love giving gifts and giving them a theme is even better. In the past I have made "Sunshine Boxes" and sent them to my mom and sister to brighten their day. A Sunshine Box consists of everything yellow and bright and believe me it is harder than you think to find all one color items. For Madison's teachers I made an orange themed box and it was even harder! But I love the way the turned out and I hope they love them too. Just a little thank you for watching my her while I get a break.

I started my search at The Dollar Store and Target because I needed to get stuff for 4 teachers and didn't want to spend a ton per gift. I found Cheetos, a tangerine candle, Reece's Pieces, orange Trident, Tangerine Ice water and orange baskets.

SUPER Birthday!

My nephew recently turned the big 4! Time really does fly and planning his parties get better every year. This year my sister knew he had to do a superhero party because he is obsessed with Spiderman. So off to Pinterest I went and I started planning the party.

We tried to make it resemble a city skyline by covering boxes in black wrapping paper and post its or a skyline picture.  Pictured are the delicious "bat wings", "power nuggets" and "super vision sticks."

Drinks were "Hero H2o", "Thor's Lightening Lemonade", "Hulk's Punch" and "Joker's Juice". 

"Cat woman Claws", "Spiderwebs" and "Energy Bursts".

Yummy cupcakes made by a family friend and I made the toppers from downloading the pictures the and taping to toothpicks.

He had an extra special Spiderman cape that was reversible for different colored spiders.

Turkey Turkey!

Tonight's dinner was Turkey breasts, green beans and mashed potatoes. I found this recipe on Pinterest and was amazed by how easy it was. Turkey, olive oil and a packet of onion soup mix and throw it in the crock pot. Of course I could mess this up and I ended up buying the thin cut breasts so it was a little different than I planned but still good.

Quesadilla Burger

Yum yum!! This is definitely one we will repeat because not only is it delicious but it was super easy too.  I did not use buffalo because we have a freezer full of freshly butchered beef.  I used wheat tortillas for mine and Madi's but of course Matt has to be a rebel and had a regular tortilla.

New recipes this week

We have been in a recipe rut over the past few months. I have been so focused on eating healthy that I have gotten a little boring with just fish or chicken meals. SO this week I have five new recipes that I will post. They may not all be the healthiest but they are hopefully delicious! 

Last night we had Buffalo Chicken Lettuce Wraps. Well I had lettuce... Matt tried one and then opted for a regular tortilla. 


The recipe called for Blue Cheese but we are not BC lovers so we used a light ranch. These were delicious! The chicken had a lot of flavor and I added a little more hot sauce than it called for so it had a lot of kick!
