Pizza is probably my favorite go to food. Whether it is ordered or homemade I love eating pizza! A couple weeks ago I ventured out and made a corn and black bean pizza. The recipe I found called for just black beans, corn, BBQ sauce and cheese but I knew Matt would want something more hearty so I added chicken. It turned out so good and will definitely be made again soon.
Corn and Black Bean Pizza:
- Pizza crust of your choice
- Chicken breasts
- BBQ sauce
- 1 can of corn
- 1 can of black beans
- Mozzarella cheese
I first cut my chicken up thinly and tossed in a little BBQ sauce to add some flavor. Cook until done and set aside. I used a canned Thin Crust pizza crust because they are so easy and you can stretch them out to be extra thin. I topped the crust with BBQ sauce. You can use as much or as little as you like on this pizza. Top the pizza with your black beans, corn and chicken. Make sure you spread everything out evenly. Then sprinkle mozzarella cheese on top and bake at 350' until the crust is done. Matt loves lots of sauce and cheese so I loaded it up!
